Eggplants (aubergines), from the Solanaceae family, species Solanum melongena, are native to South
and Southeast Asia. They grow as bushy plants about 40–150 cm tall with large, lobed leaves 10–25
cm long. The fruit is typically dark purple, glossy, and oval or elongated, sometimes white or striped.
Eggplants provide dietary fiber, vitamins B1 and B6, and antioxidants such as nasunin, which protects
brain cells. They are commonly grilled, roasted, fried, or used in stews and casseroles. Store eggplants
in a cool place but avoid refrigeration to prevent browning.
