Spring onions, a variety of Allium fistulosum or immature Allium cepa, have slender white bulbs and
long green stalks. These plants grow 30–60 cm tall with tubular green leaves. They’re mild and sweet
compared to mature onions and are used raw in salads, as garnishes, or lightly cooked. High in
vitamin K and fiber, they promote digestion and bone health. Store in the fridge wrapped in a damp
towel or upright in water.
