A variety of Allium fistulosum or immature Allium cepa, have slender white bulbs and long green stalks. These plants grow 30-60 cm tall with tubular green leaves. They’re mild and sweet compared to mature onions and are used raw in salads, as garnishes, or lightly cooked. High in vitamin K and fiber, they promote digestion and bone health. Store in the fridge wrapped in a damp towel or upright in water.
